PEANUT LIME DRESSING

A new salad dressing is a great way to spice up your salads. This Peanut Lime Salad dressing is creamy, sweet, tangy and tangy all in one. It’s also vegan! This dressing is perfect for Asian-inspired cabbage salads, but it can also be used to drizzle over grilled chicken, shrimp or other vegetables.

What type of oil should I use?

To give you some flexibility, I have included “neutral oil” on the ingredients list. Any oil that isn’t heavily flavored is neutral. These oils are light in color and have no strong flavor. They can be used as a base for sauces or dressings. Avocado oil is more expensive than the one I used today. However, you can also use vegetables, grape seed and peanut oils, canola, safflower, sesame (not toast), and canola.

WHAT AGE DOES PEANUT LIME TAKE TO DRESS?

This dressing is made with fresh ingredients like Ginger and garlic, so it should be kept in the fridge for no more than 5 days. This makes a small batch, so you will probably use it all.

WHAT SHOULD I SERVE PEANUT VICTORY DRESSING WITH

It’s great with crunchy cabbage salads. But it also tastes great on noodles, chicken, shrimp, and grilled or roasted vegetables. It’s so good that you will want to try it. 😉

Updates I made two minor changes to the original recipe I posted in 2013. To make the dressing thicker, I added 1 Tbsp of peanut butter (I used a different brand of peanut oil than I did originally). I ADDED SOME FRESH GINGER because I wanted to add a little more flavor.

PEANUT LIME DRESSING

Peanut Lime Salad dressing is sweet and savory as well as tangy and creamy. Use it as a dressing for salads, grilled chicken, shrimp, and other vegetables.

Total Time: 5 minutes

Servings: 2.5 Tbsp per person

INGREDIENTS

  • 3 Tbsp peanut butter, natural style ($0.21).
  • 1 Tbsp brown sugar ($0.04)
  • 1 clove minced garlic ($0.08)
  • 1/2 tsp grated fresh Ginger ($0.05
  • 1 medium lime juiced (2 Tbsp) ($0.69)
  • 2 tsp soy sauce ($0.08)
  • 1/4 cup neutral oil* ($0.82)

INSTRUCTIONS

  • Mix all ingredients in a bowl. Whisk or blend until smooth.
  • Serve immediately, or refrigerate for up to five days.
  • For the dressing: In a medium bowl, combine the peanut butter, rice vinegar, sesame oil, lime juice, soy sauce, canola oil, sugar and honey and whisk until smooth. Add the red pepper flakes, garlic, Ginger, cilantro, and sesame seeds and mix until combined. Alternately, you can combine all ingredients in a blender and process until completely smooth. Let dressing rest for 10 minutes before tossing with salad.
  • For the Salad: In a large bowl, combine all ingredients, and toss. Right before serving, drizzle peanut lime dressing over the top and toss.

NOTES

*Any light-flavored oil. The avocado was used, which increased the price a lot. You can also use vegetable, safflower or grape seed oil, which are less expensive.
